Silverside Roast with Garlic and Rosemary:
Ingredients:
  • 1.5 kg silverside beef roast
  • 4 garlic cloves, minced
  • 2 tablespoons fresh rosemary leaves, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
Instructions:
  1. Preheat the oven to 180°C (350°F).
  2. In a small bowl, mix together the minced garlic, chopped rosemary, olive oil, salt, and pepper.
  3. Rub the garlic and rosemary mixture all over the silverside roast, ensuring it is well coated.
  4. Place the roast in a roasting pan and cover with foil.
  5. Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 60°C (140°F) for medium-rare.
  6. Remove the foil and increase the oven temperature to 220°C (425°F).
  7. Return the roast to the oven and cook for an additional 10-15 minutes, or until the top is browned and crispy.
  8. Remove the roast from the oven and let it rest for 10-15 minutes before slicing.
  9. Serve the silverside roast with your favorite side dishes and enjoy!
